Brandied Blue Cheese, Walnut and Pear Crostini

  1. 4 oz. blue cheese, crumbled 125 g
  2. 2 Tbsp. butter 30 mL
  3. 2 Tbsp. brandy 30 mL
  4. ¼ CUP coarsely chopped walnuts 60 mL
  5. 16 ½" (1.3 cm) baguette slices
  6. 1 ripe pear, thinly sliced
  1. Soften cheese and butter. Mash with fork until smooth. Stir brandy and walnuts into cheese mixture.
  2. Place baguette slices on cookie sheet. Toast 1 side under broiler. (Keep an eye on them as they will toast quickly!)
  3. Turn and place pear slice on untoasted side.
  4. Top with teaspoonful of cheese mixture.
  5. Broil 4-5" (10-13 cm) from heat for about 2 minutes, or until cheese is bubbly. Serves 8.
