Blue Cheese Dip
- 1⁄3 cup mayonnaise 75 mL
- 1⁄4 cup crumbled blue cheese 60 mL
- 2 tbsp extra virgin olive oil 30 mL
- 1 tbsp lemon juice 15 mL
- Pinch black pepper
Prosciutto-Wrapped Asparagus
- 24 thick spears asparagus
- 1 tbsp extra virgin olive oil 15 mL
- 12 thin slices prosciutto or serrano ham
Instructions
- Blue Cheese Dip: In a bowl, stir together mayonnaise, cheese, oil, lemon juice and pepper until combined. Scrape into a small serving dish; set aside.
- Prosciutto-Wrapped Asparagus: Preheat grill to medium-high heat. Snap tough ends off asparagus and discard. Toss asparagus with oil and pepper.
- Cut prosciutto in half lengthwise and wrap each half around one of the asparagus spears. Repeat with remaining ingredients. Place on a greased grill for about 8 minutes, turning occasionally until golden and crisp and asparagus is tender crisp. Serve with dipping sauce.
- Makes 24 asparagus spears or 6 to 8 servings.
Notes
- Substitute thin crisp breadsticks for the asparagus for a no-grilling-required option to dip into the sauce.
- For something different, try wrapping cantaloupe or honeydew melon with the prosciutto for a before-dinner appetizer — no need for grilling or dipping sauce.
