Prosciutto-Wrapped Asparagus with Blue Cheese Dip

Be sure to serve the asparagus right off the grill while enjoying drinks on the deck.

Blue Cheese Dip
  1. 1⁄3 cup mayonnaise 75 mL
  2. 1⁄4 cup crumbled blue cheese 60 mL
  3. 2 tbsp extra virgin olive oil 30 mL
  4. 1 tbsp lemon juice 15 mL
  5. Pinch black pepper
Prosciutto-Wrapped Asparagus
  1. 24 thick spears asparagus
  2. 1 tbsp extra virgin olive oil 15 mL
  3. 12 thin slices prosciutto or serrano ham
Instructions
  1. Blue Cheese Dip: In a bowl, stir together mayonnaise, cheese, oil, lemon juice and pepper until combined. Scrape into a small serving dish; set aside.
  2. Prosciutto-Wrapped Asparagus: Preheat grill to medium-high heat. Snap tough ends off asparagus and discard. Toss asparagus with oil and pepper.
  3. Cut prosciutto in half lengthwise and wrap each half around one of the asparagus spears. Repeat with remaining ingredients. Place on a greased grill for about 8 minutes, turning occasionally until golden and crisp and asparagus is tender crisp. Serve with dipping sauce.
  4. Makes 24 asparagus spears or 6 to 8 servings.
Notes
  1. Substitute thin crisp breadsticks for the asparagus for a no-grilling-required option to dip into the sauce.
  2. For something different, try wrapping cantaloupe or honeydew melon with the prosciutto for a before-dinner appetizer — no need for grilling or dipping sauce.
