Salted Peanut Butter Hot Chocolate

We tried a version of this on a winter trip to New York — it’s like a melted peanut butter cup in your mug. Serve warm, topped with marshmallows or a dollop of whipped cream, if you like.

Ingredients
  1. 1⁄4 cup sugar 60 mL
  2. 1⁄4 cup unsweetened cocoa powder 60 mL
  3. 1⁄4 cup water 60 mL
  4. 4 cups 2% or whole (homogenized) milk 1 L
  5. 1⁄4 cup creamy peanut butter 60 mL
  6. 3 oz dark or bittersweet chocolate, finely chopped 90 g
  7. Pinch salt
Instructions
  1. In a small bowl or measuring cup, whisk together sugar and cocoa to get rid of any lumps. Whisk in water.
  2. Pour milk into a 4-quart slow cooker and add the cocoa mixture, peanut butter and chocolate. Cover and cook on low for 2 hours or until steaming. Add a pinch of salt and whisk until smooth (or use an immersion blender to blend it right in the slow cooker; this will emulsify the mixture, making it ultra-smooth).
  3. Serves 6.
