Oven-Baked Fried Rice

We love this take on traditional fried rice. Start with raw rice, toss in the other ingredients, then cover and bake for a fluffy delicious oven dish. The recipe is flexible with the vegetables and meat, making it a perfect way to use whatever you have on hand.

Ingredients
  1. 1 ¾ cups (425 mL) long grain white rice
  2. 2 cups (500 mL) ready-to-use chicken broth
  3. 3 cups (750 mL) diced mixed frozen vegetables
  4. 2 tbsp (30 mL) canola oil
  5. 2 tbsp (30 mL) soy sauce
  6. 1 tbsp (15 mL) hoisin sauce
  7. 3 garlic cloves, minced
  8. ½ tsp (2 mL) black pepper
  9. 2 cups (500 mL) cooked diced ham
  10. 1 tbsp (15 mL) toasted sesame seeds
  11. 2 tsp (10 mL) sesame oil
  12. 2 green onions, thinly sliced
  13. Sriracha
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a 13- by 9-inch (33 by 23 cm) baking pan, add rice, broth, vegetables, oil, soy sauce, hoisin sauce, garlic and pepper; stir to combine, then spread into an even layer. Sprinkle ham over top.
  3. Cover tightly with foil and bake 40 minutes. Remove foil and bake uncovered for 10 minutes to crisp the ham. Remove from oven and recover with foil; let rest 10 minutes to allow the rice to finish steaming.
  4. Remove foil and stir in sesame seeds, sesame oil and green onions. Serve with Sriracha on the side.
  5. Serves 6
Notes
  1. To make this a meal, serve with fried eggs on top. You can substitute the ham with cooked chicken, pork or beef. Use any mix of frozen vegetables; large pieces will need to be diced for even cooking.
