Mandarin Orange Yogurt Mousse

Light and refreshing, this dessert will brighten your day. Add some crumbled chocolate cookies or half a pizzelle cookie when serving. If you love chocolate and orange, then a sprinkle of chopped chocolate over top is perfect! Or try our Orange Candied Pecan Garnish for added crunch (see notes, below).

Mandarin Orange Yogurt Mousse from Best of Bridge Done in One

Ingredients
  1. 1 tbsp (15 mL) grated orange zest
  2. 1/3 cup (75 mL) granulated sugar
  3. 3/4 cup (175 mL) heavy or whipping (35%) cream
  4. 2 cups (500 mL) 2% Greek-style vanilla yogurt
  5. 2 tbsp (30 mL) orange juice
  6. 1 tsp (5 mL) vanilla
  7. 2 cans (10 oz/284 mL each) mandarin oranges, drained
  8. Serves 6 to 8
Instructions
  1. In a large bowl, with your fingers, rub together (or stir) orange zest and sugar until sugar is orange in color; remove half to a small bowl.
  2. Add cream to sugar mixture and beat until stiff peaks form. Whisk in vanilla yogurt, orange juice and vanilla until smooth. Fold in mandarin oranges, reserving a few pieces for the top for garnish.
  3. Spoon yogurt mousse into serving dishes and garnish with remaining orange sugar and mandarins.
Notes
  1. Orange Candied Pecan Garnish
  2. In a small skillet, bring 3 tbsp (45 mL) orange juice and 3 tbsp (45 mL) granulated sugar to boil until starting to turn golden. Stir in 1/2 cup (125 mL) pecan halves and cook, stirring over low heat for about 7 minutes or until mixture is fragrant and pecans are well coated. Spread onto parchment paper to cool completely. Break up and sprinkle over top of yogurt mousse, if desired.
