  2. 6 bacon slices, chopped
  3. 2 garlic cloves, minced
  4. 1 shallot, diced
  5. 1 cup chopped mushrooms 250 mL
  6. 1⁄2 tsp dried thyme 2 mL
  7. 1⁄2 tsp salt 2 mL
  8. 1⁄2 tsp black pepper 2 mL
  9. 1 cup shredded Cheddar cheese 250 mL
  10. 2 green onions, thinly sliced
  1. Preheat oven to 400°F (200°C).
  2. Prick potatoes all over with a fork. Bake for about 1 hour or until tender. Reduce oven temperature to 375°F (190°C).

  4. Reduce heat to medium and sauté garlic, shallot, mushrooms and thyme for 5 minutes or until golden. Remove from heat.

Stir in cheese and green onions. Mound mixture into potato shells and place on a baking sheet. Bake for about 15 minutes or until golden brown.
