Jerk Chicken and Sweet Potato Sheet Pan Supper

Spice up your weeknight dinners with this easy, Caribbean inspired recipe.

The easiest of easy sheet pan suppers… island-style.

Ingredients
  1. 4 chicken legs, cut into thighs and drumsticks (about 2 lbs/1 kg)
  2. 1⁄2 cup jerk seasoning sauce or paste 125 mL
  3. 2 small sweet potatoes, scrubbed
  4. 1 onion, cut into thin wedges
  5. 1 tbsp canola oil 15 mL
  6. 2 tsp chopped fresh thyme 10 mL
 (or 3⁄4 tsp/3 mL dried)
  7. 1⁄4 tsp each salt and black pepper 1 mL
Instructions
  1. Preheat oven to 400°F (200°C). Pierce chicken pieces all over with fork. Toss with jerk sauce and place on parchment-lined baking sheet. Roast for 15 minutes.
  2. Meanwhile, cut sweet potatoes into fries 1 inch (2.5 cm) wide and place in a large bowl. Add onion, oil, thyme, salt and pepper and toss well to coat. Add to baking sheet and roast for another 25 minutes or until chicken is no longer pink and sweet potatoes are tender.
  3. Serves 4 to 6.
