Frozen Peach Bellini Cocktails

It’s time to clink your glasses with this fruity drink! Enjoy as a refreshing slushie to sip on during brunch and other get togethers. Grenadine is a deep red colored syrup made from pomegranate juice that creates a beautiful pink ombre effect in the glass.

Serves 8
  1. 4 cups (1 L) frozen peaches
  2. 1 ½ cups (375 mL) peach nectar or apricot juice
  3. 1 lime, juiced
  4. Grenadine syrup
  5. 3 cups (750 mL) chilled sparkling wine or champagne
  6. Fresh peaches to garnish (optional)
  1. In a blender, add frozen peaches, peach nectar and lime juice, blend until smooth.
  2. In each glass, add about 1 tsp (5 mL) of grenadine, then add about ½ cup (125 mL) of peach purée.
  3. Top up each glass with sparkling wine. Garnish with fresh peach slices, if desired.
  1. For a non-alcoholic version, substitute the wine with sparkling water, club soda or lemon-lime soda.
