Very moist. Great for the lunch box!
- 1/2 cup margarine
- 1 cup sugar
- 2 eggs
- 1 cup ripe bananas-mashed
- 1 1/2 cups sifted flour
- 1 tsp. nutmeg
- 1 tsp. baking soda
- 2 tsps. hot water
- 1 tsp. vanilla
- Cream margarine and sugar. Add eggs and bananas. Mix well. Stir in flour and nutmeg. Dissolve soda in hot water, add to banana mixture. Stir in vanilla. Fill greased muffin tins 1/2 full. Bake at 350 for approximately 20 minutes or until golden brown. Makes 24 medium muffins.

Can I add raisins to the Best Ever Banana Muffins, without altering the recipe? Love them but I’ve been asked to add raisins…?!
