Stampede Morning Parent Saver

Stampede can be a crazy time of year if you live in Calgary – if you’re feeling rushed, you can make this cowboy-inspired version of the famous Best of Bridge Christmas Morning Wife Saver, and slide it into the oven in the morning to feed your hungry cowpokes.

Even when it’s not stampede, a simple strata makes for a fantastic brunch – and it’s a great way to use up stale veg or leftovers from the fridge – bits of sausage, ham, bacon, veggies and even cheese ends can all be transformed into something delicious.

Ingredients
  1. canola oil, for cooking
  2. 1 small onion, chopped
  3. 1 small red, yellow or orange pepper, seeded and chopped
  4. 6 small breakfast sausages
  5. 1 loaf crusty bread, cut into cubes
  6. 1-2 cups grated aged cheddar or Gouda
  7. 6 large eggs
  8. 3 cups milk
  9. 2 Tbsp. barbecue sauce
  10. 2 tsp. grainy mustard
Instructions
  1. Set a medium skillet over medium-high heat. Add a drizzle of oil and saute the onion and pepper for 3-4 minutes, until soft. Squeeze the sausage out of their casings into the pan and cook, breaking the meat up with a spoon, until it’s no longer pink.
  2. Spread the bread cubes out into a buttered 9x13-inch baking dish and sprinkle with the sausage and veggies and half the cheese. In a large bowl, whisk together the eggs, milk, barbecue sauce and mustard and pour overtop. Cover and refrigerate for an hour, or overnight.
  3. In the morning, preheat the oven to 350˚F. Uncover and scatter with more cheese, if you like. Bake for 45 minutes to an hour, until puffed and golden. Let sit for 10 minutes before serving.
  4. Serves 8.
