Bring Mediterranean flavours to your backyard with these Hummus Souvlaki Chicken Burgers. Topped with a creamy roasted red pepper feta hummus sauce, they’re a fresh and easy summer dinner.

Roasted Pepper Feta Hummus Sauce
- 1/2 cup (125 mL) hummus
- 1/2 cup (125 mL) roasted red pepper
- 1/4 cup (60 mL) crumbled feta cheese
- 2 tbsp (30 mL) chopped fresh parsley
Souvlaki Burgers
- 2 boneless skinless chicken breasts
- 3 tbsp (45 mL) canola oil
- 2 garlic cloves, minced
- 1/2 tsp (2 mL) grated lemon zest
- 2 tbsp (30 mL) lemon juice
- 1 tsp (5 mL) dried oregano
- 1/4 tsp (1 mL) each salt and black pepper
- 4 burger buns
- 1 cup (250 mL) torn romaine lettuce
- Sliced cucumbers
Instructions
- Roasted Pepper Feta Hummus Sauce: In a small food processor, combine hummus and roasted red peppers; purée until smooth. Stir in feta and parsley; set aside or cover and refrigerate until ready to use.
- Souvlaki Burgers: Slice chicken breasts in half horizontally to get 4 equal pieces of chicken. In a shallow dish, whisk together oil, garlic, lemon zest, lemon juice, oregano, salt and pepper. Add chicken and turn to coat well. Let stand for 15 minutes or cover and refrigerate for up to 4 hours.
- Preheat grill to medium heat. Place chicken on greased grill, turning occasionally, for about 10 minutes or until no longer pink inside and thermometer registers 165°F (74°C).
- Spread some of the Roasted Pepper Feta Hummus sauce on the bottom buns and top with lettuce, then grilled chicken. Spread with more sauce and top with cucumbers. Add top bun and serve.
- Serves 4
Variation
- Substitute 1 tub (8 oz/227 g) roasted red pepper hummus for the hummus and roasted red pepper for a quick shortcut.
