Apple Pecan Phyllo Crisps

Ingredients
  1. Shells
  2. 2 sheets phyllo pastry
  3. 2 tsp. butter, melted
  4. Filling
  5. 1/3 cup brown sugar
  6. 1 tsp. grated lemon zest
  7. 1 Tbsp. lemon juice
  8. 1/2 tsp. cinnamon
  9. 3 cups peeled, sliced apples
  10. 2 Tbsp. chopped toasted pecans
  11. icing sugar to spinkle
Instructions
  1. To prepare shells: Preheat oven to 400 F. Lay phyllo sheet on work surface and brush with half the butter. Using scissors, cut into three 5″ wide strips. Fold ends in to make a rectangle of 3 layers; gently mold into muffin cups. Repeat with remaining phyllo and butter – makes 6 shells. Bake 5 minutes, or until golden. These can be stored in an airtight container for up to 3 days.
  2. To prepare filling: In a heavy skillet, heat sugar, lemon rind and juice and cinnamon until bubbly. Add apples and cook, stirring frequently for 5 minutes or until tender. Let cool slightly. Spoon into prepared shells. Sprinkle with toasted pecans, then icing sugar. Serves 6.

This appetizer is always a big hit and best of all it’s not difficult to make

Ingredients
  1. 7 sheets phyllo pastry
  2. 1/2 cup butter, melted 125 mL
  3. 1/2 cup freshly grated Parmesan 125 mL
  4. cheese
  5. 1 1/2 cups grated Mozzarella 375 mL
  6. cheese
  7. 1 onion, thinly sliced
  8. 5-6 Roma tomatoes, thinly sliced
  9. 1 tsp. oregano 5 mL
  10. salt & pepper to taste
  11. fresh herb sprigs – thyme, oregano, rosemary
  12. To exercise is human – not to is divine!
Instructions
  1. Preheat oven to 375 deg.F (190 deg.C). To thaw and prepare phyllo, follow package instructions. Place first sheet of phyllo on baking sheet, brush with butter and sprinkle with 1 Tbsp.(15 mL) Parmesan cheese. Repeat until all sheets are used. Press firmly so layers will stick together. Sprinkle top sheet with Mozzarella and onions. Arrange tomato slices on top. Season with oregano, salt and pepper. Bake for 20-25 minutes, until edges are golden. Decorate with herbs and cut into squares. Note: Olives, anchovies, peppers can also be used – but don’t overload as this is a delicate crust!

French Lemon Pie

French Lemon Pie

Ingredients
  1. 4 eggs
  2. 1 cup light corn syrup
  3. 1 tsp. grated lemon zest
  4. 1/3 cup FRESH lemon juice (about 3 lemons)
  5. 2 Tbsp. melted butter
  6. 1/2 cup sugar
  7. 2 Tbsp. flour
  8. 1 unbaked 9″ pie shell
  9. 1/2 cup whipping cream
Instructions
  1. In a medium bowl, beat eggs well. Add corn syrup, lemon zest, lemon juice and melted butter. Combine sugar and flour, then stir into egg mixture. Pour into unbaked pastry shell and bake at 350 F. for 50 minutes. Chill. To serve, whip cream and mound onto pie.

  1. 12″ pizza crust (see Fast and Easy Pizza Crust – That’s Trump – pg.96) or purchased pizza crust 30cm
  2. olive oil to brush on crust
  3. 1 – 14 oz. can pears, drained and sliced in thin strips 398ml
  4. 2 Tbsp. toasted pine nuts 30ml
  5. 3 oz. Cambozola cheese, sliced or crumbled 85g
  6. freshly ground pepper
Instructions
  1. Preheat over to 450F (230C). Brush crust with olive oil, arrange pears on crust in pinwheel pattern, sprinkle with pine nuts, top with cheese and sprinkle of pepper. Bake 10-15 minutes, until crust is golden.
  2. Another Good Idea: For apple and Brie pizza, saute’ sliced apples in butter and brown sugar. Sprinkle with cinnamon. Dot pizza crust with broken pieces of Brie chesse, arrange apples on top and sprinkle with chopped walnuts and fresh rosemary. Bake as above.

  2. 1 cup sugar
  3. 2 eggs
  4. 1 cup ripe bananas-mashed
  5. 1 1/2 cups sifted flour
  6. 1 tsp. nutmeg
  7. 1 tsp. baking soda
  8. 2 tsps. hot water
  9. 1 tsp. vanilla
Instructions
  1. Cream margarine and sugar. Add eggs and bananas. Mix well. Stir in flour and nutmeg. Dissolve soda in hot water, add to banana mixture. Stir in vanilla. Fill greased muffin tins 1/2 full. Bake at 350 for approximately 20 minutes or until golden brown. Makes 24 medium muffins.

Ingredients
  1. 2 1/2 cups macaroni (625 ml)
  2. 1/4 cup butter (60 ml)
  3. 1/4 cup flour (60 ml)
  4. 2 cups milk (500 ml)
  5. 1 tsp. salt (5 ml)
  6. 1 tsp. sugar (5 ml)
  7. 1/2 lb. processed cheese, cubed (250 g)
  8. (Velveeta)
  9. 2/3 cup sour cream (150 ml)(fat free
  10. is fine)
  11. 1 1/3 cups cottage cheese (325 ml)
  12. 2 cups grated old cheddar cheese (500 ml)
  13. 1 1/2 cups soft breadcrumbs (375 ml)
  14. 2 Tbsp. butter (30 ml)
  15. paprika
Instructions
  1. Cook and drain macaroni and place in a 2 1/2 quart (2.5 L) greased casserole. Melt butter over medium heat; stir in flour; mix well. Add milk and cook over medium heat, stirring constantly until sauce thickens. Add salt, sugar and cheese. Mix well. Mix sour cream and cottage cheese into sauce. Pour over macaroni. Mix well. Sprinkle cheddar cheese and crumbs over top. Dot with butter and sprinkle with paprika. May be frozen at this point. Bake at 350F (180C) for 45-50 minutes. Serves 6.
