So quick you won't believe it - you could sell a house with the baking aroma from these little gems!

Ingredients:
1 orange
1/2 cup orange juice
1 egg
1/4 cup oil
1 1/2 cups flour
3/4 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 cup raisins or dried cranberries(optional)
1/2 cup chopped nuts (optional)

Instructions:
Cut orange into 8 pieces. Put cut-up orange (that's right - the whole orange), orange juice, egg and oil in blender. Blend until smooth. Add flour, sugar, baking powder, baking soda and salt. Blend. Add raisins and nuts. Blend just until mixed. Pour mixture into muffin tins and bake at 375 deg.F (190 deg.C) for 15-20 minutes. Makes 16 medium muffins.

I just got skylights put in my place. The people who live above me are furious.

My mom just reminded me of this recipe and I made it on the weekend! I used my food processor - used two whole oranges and no orange juice. Once it was blended in the processor I transferred it to my mixer with the dry ingredients and it worked just fine! Quick and yummy!

I tried this recipe and had to mix it in a bowl once i put the dry ingredients in. I do have a decent blender, did I do something wrong? Maybe the orange wasnt big enough, I used a mandarin.

This is the quickest recipe I've ever tried! My mother-in-law dropped by to say hi, and at the end of her short visit, she had warm, delicious muffins to take home! Tasty, easy and quick! what more could you want?
