Mindless Meat Sauce

Use this sauce in any recipe calling for meat sauce such as spaghetti, lasagne or cannelloni.

Ingredients:
1 1/2 lb. lean ground beef
1/2 tsp. sage
1 tsp. oregano
1 tsp. basil
salt and pepper to taste
1 medium onion, finely chopped
15 large mushrooms, finely chopped
3 cloves garlic, minced
28 oz. (796 ml) can tomatoes, chopped
14 oz. (398 ml) can tomato sauce
5 1/2 oz. (156 ml) tomato paste
1 tsp. sugar

Instructions:
In a large heavy bottomed pot, brown meat with spices, onion, mushrooms and garlic until onion is soft. Add tomatoes, tomato sauce, paste and sugar. Bring to boil, reduce heat and simmer uncovered, at least 1 hour. Correct seasonings to taste. Store in containers and freeze.

I have used this recipe many times, and I thought the original recipe called for me to roast the meat in the oven for 30 minutes, then saute the mushrooms and onions on top of the stove and then put them on top of the meat in the oven. This is the way I have done it, and the flavor is outstanding. Thanks for all the great recipes!

I have made Mindless meat sauce dozens of times. I double the recipe and can use it for spagetti sauce or for lasagna or as a base for chili. I am at my cottage and do not have my Enjoy cookbook here. I am sure I could make the recipe by heart but decided to check your site. I am very pleased I can access the recipes here. I do have 4 of your books here but will be able to find any recipes I do not have with me here. Thanks for all the great recipes that my family and I have enjoyed over the years.
