Brandied Blue Cheese and Pear Crostini

A snap to make - and always a hit!

Ingredients:
4 oz. (125 g) blue cheese, crumbled
2 Tbsp. butter
2 Tbsp. brandy
1/4 cup coarsely chopped walnuts
16, 1/2" baguette slices
1 ripe pear, thinly sliced

Instructions:
Soften cheese and butter. Mash with fork until smooth. Stir brandy and walnuts into cheese mixture. Place baguette slices on cookie sheet. Toast 1 side under broiler. Turn and place pear slice on untoasted side. Top with teaspoonful of cheese mixture. Broil 4-5" from heat for about 2 minutes, or until cheese is bubbly. Serves 8.

I am making the "Brandied Blue Cheese and Pear Crostini" today for the second time. It is wonderful, tasty and enjoyed by all.

Was looking forward to testing this recipe, but was disappointed. I wonder if my brandy had gone "bad" or is 2tbsp too much? Would like to try again, but will buy new brandy and add gradually to taste.
