Best Ever Banana Bread

Freeze overripe bananas in their skins in a plastic bag - when you've got 6, you're ready to make the best banana bread you've ever tasted.
A tip from our friend Janice on Salt Spring: you can add frozen blueberries but don't mix them into the batter - the colour runs. Just alternate batter and blueberries as you fill the bundt pan.

Ingredients:
1 cup (250 mL)butter
2 cups (500 mL) sugar
3 cups (650 mL) mashed ripe bananas (6)
4 eggs, well beaten
2 1/2 cups (625 mL)flour
2 tsp. (10 mL)baking soda
1 tsp. (5 mL) salt
1 tsp. (5 mL) nutmeg

Instructions:
Preheat oven to 350F (180C). Cream butter and sugar until light and fluffy. Add bananas and eggs and beat until well mixed. Mix dry ingredients and blend with banana mixture, but do not overmix. Pour into 2 lightly greased loaf pans or a bundt pan. Bake 55 minutes to 1 hour; test for doneness (toothpick inserted in middle comes out clean) and cool on rack for 10 minutes before removing from pans. Freezes beautifully.

The name of the recipe says it all. Prepared as written, I have received countless requests for the recipe. However, Judeo-Christian ethics have prevented me from passing it off as my own. With all due respect to the others who have commented with their versions, though the original is decadent with all the butter, eggs and sugar, I personally would not change a thing. It is, to borrow a phrase, the Best Ever Banana Bread.

I just fixed this for the first time last week. It is moist, has only a few ingredients, and it will be my only banana bread recipe from now on.

This is the only Banana Bread recipe I use. Freezes well and is always well received.

This is my new banana bread recipe from now on! It freezes beautifully as well. Next time I will try only half the amount of sugar as recommended by other reviewers.

My husband made this, cutting the sugar in half and he brought it to a gathering and all the women fell in love with him. It really is the best banana bread ever. Our daughter has added chocolate chips to the recipe too.

This banana bread is the best my family has ever tasted.
I use half brown sugar and half white and substitute 1/2 cup of bran or a mix of bran and wheat germ for 1/2 cup of flour (2cups flour and 1/2 cup bran). I also omit the nutmeg. My 5 year old grandson is addicted to it!

for the banana bread, even better is to add frozen cranberries, they don't stain and add fiber,and it tastes great!

I used this as a birthday cake for my daughter. She is allergic to eggs so I used egg replacer, 2 tablespoons of honey and cinn instead of nutmeg, it was awesome!!!

I didn't even like banana bread until I made this once to use up a bunch of bananas! I've been making it for years, and everyone asks for the recipe. Absolutely the best!

When they say best they mean best-everyone asks for the recipe while devouring the bread-it is so moist and delicious-only change I've made is not to add the blueberries-(my batter turned blue)-but instead add chocolate chips-makes it decadent-freezes very well-nice to bring along on a cottage weekend or road trip.
