Hamburger Soup

Don't be deceived by the name - this is a family favorite and a breeze for entertaining. This recipe makes 18 soup ladles and freezes very well.

Ingredients:
1 1/2 lbs. ground beef
1 medium onion,finely chopped
1 - 28 oz. can tomatoes
2 cups water 500 mL
3 - 10 oz. cans consomme
1 - 10 oz. can tomato soup
4 carrots, finely chopped
1 bay leaf
3 sticks celery, finely chopped parsley
pepper to taste
1/2 cup pot barley 125 mL

Instructions:
Brown meat and onions. Drain well. Combine all ingredients in large pot. Simmer covered, at least 2 hours, or all day. Serves 10.

I've made this many times, and is great with homemade buns, or buttermilk biscuits. It's even better leftover.

This soup is delicious. I have also made it with ground chicken or turkey and changed the consomme to chicken broth.
I have put chopped potatoes in instead of barley. It is good, but the potatoes don't freeze well.
Beans and/or corn are good as well in the soup.

I make a triple batch of this wonderful soup every fall
and freeze it. We use it for lunches at work; a good
warm-up after snowmobiling; or a light supper on a cold
night.
All generations love it!!

This is good (especially after a few days) but very salty for my taste. Try sub-ing low-salt canned broths or add more water to fulfill the liquid requirements. So many canned soup type ingredients usually means lots of MSG which is not too good for you. Look for healthier alternatives.

This is a great soup to eat on cold winter days. It freezes so well just like the recipe says. I have amazed family and friends with this recipe. I highly reccomend it to everyone who haven't tried this out. Those that have tried this recipe know what I'm talking about. I make this recipe several times a year.
