Patrick’s Salad

Goes with everything. OR – add strips of cooked chicken breast and you’ve got dinner!

Ingredients:
Dressing:
1/2 cup olive oil
1/4 cup wine vinegar (red or white)
juice of half a lime
2 tsp. soy sauce
pinch of cayenne pepper
1 large garlic clove, minced
salt and pepper to taste
3 Tbsp. chopped parsley
2 Tbsp. minced red onion
3-4 Tbsp. sugar

Salad:
romaine lettuce
1 large red pepper
snow peas
slivered almonds, toasted

Instructions:
To make dressing: Combine ingredients in a blender and blend well. Pour into a jar and refrigerate.
Wash and tear romaine into bite-sized pieces. Cut red pepper and pea pods into long strips. Add toasted almonds. Toss with dressing just before serving.

The best way to forget all your troubles is to wear tight shoes.
